Cilantro Lime Quinoa Salad

Ok, are you ready? Your tastebuds are going to explode with this flavor packed, SIMPLE, cold Quinoa salad! This recipe is perfect for Spring as the days get longer and the weather gets warmer. This dish has been one of our go to’s FOR YEARS and I’m confident it will quickly become one of yours too! I also love to meal prep this and top it with some grilled chicken and avocado for lunches during the week.

INGREDIENTS:

2 CUPS QUINOA (Psst: Costco has the best deal on Quinoa!)

4 CUPS OF WATER OR CHICKEN BROTH (I use chicken broth)

1 15oz CAN OF BLACK BEANS (drained and rinsed)

1/2 CUP OF CILANTRO- CHOPPED

5 GREEN ONIONS- CHOPPED

1 RED PEPPER- DICED

2 TBSP OF OLIVE OIL

3 LIMES- JUICED

1/2 TSP CUMIN

SALT & PEPPER TO TASTE

DIRECTIONS:

-PREPARE QUINOA (with water or chicken broth) AS STATED ON THE PACKAGE.

-SET ASIDE TO COOL COMPLETELY- You can place in the fridge or freezer for express cooling.

-COMBINE THE REST OF THE INGREDIENTS IN ANOTHER BOWL, SET ASIDE.

-ONCE THE QUINOA IS COMPLETELY COOLED, COMBINE INGREDIENTS!

~Keep refrigerated until ready to serve. You can also serve this recipe warm, but my favorite way to eat it is cold. 🙂
